(acipenser baerii)

This sturgeon is widely distributed in most of the rivers in Siberia. It lives in fresh water and its shape varies among regions. A small fish, it measures between 80 cm (21/2 feet) and 1.5 meters (5 feet), and it weighs between 7 kg (15 lbs) and 12 kg (26 lbs).

Its caviar is dark grey to black with very slight colour variations.
Its grain is small to medium size (2.4 to 2.7 mm) and its flavour reminds of Asetra.
